The Soupalicious Palate Cleanse ( from the Sugar Savvy Solution by High Voltage, founder of Energy Up!!)
2 1/4 Cups dried beans (such as white beans, navy beans, black beans) Soaked overnight and sorted to remove any debris
12 Cups water, divided
1/3 Cup coconut oil or olive oil
2 Large sweet potatoes (about 5" long) peeled and chopped
5-6 Cups chopped fresh non starchy vegetables (try carrots, celery, beets, mushrooms, zucchini, summer squash, and leafy greens such as kale, Swiss chard, or spinach) - no canned veggies!
Herbs and spices to taste ( such as 4-6 cloves garlic, 1-2 tablespoons fresh basil, rosemary, or thyme. A pinch of ground red pepper or onion powder etc.
1. Rinse the soaked beans thoroughly before cooking. In a large pot over high heat, place the beans and 6 cups of the water. Bring to a boil, then reduce the heat and simmer for about an hour or until beans are tender.
2. Add the oil, spices, sweet potatoes, and vegetables and remaining 6 cups of water to the pot and simmer for an additional 30 minutes or until the vegetables are tender.
3. Puree, either in a blender or using an immersion blender.
Eat 1-2 cups ever 2 hours or so. Whenever you get hungry. Do this for 2-3 days before the challenge begins or on the first 2-3 days of the challenge. Eat nothing else during these days.
This recipe makes enough soup for 2 days.
